Green tea and black tea come from the same tea plant, Camellia sinensis. We all know that tea is loaded with the powerful antioxidant epigallocatechin gallate (EGCg). What’s the difference between green and black tea? Green tea leaves are withered and steamed. Black tea leaves are crushed and fermented. This fermentation process converts EGCg to other compounds, which made people assume that black tea has less health benefits than green tea. Researchers have proven this wrong. 1. Pre-warm cup with hot water, then discard water. (On my second try I omitted this step and it still tasted good.)
